comfort food.

Jeremy has been sick with laryngitis this week.  Flat in bed sick with little to no voice.  The poor guy.  He never gets sick.  He said he's been praying for more family time.  He's gotten plenty of it being home instead of working!  We have had lots of fun with him home but he is ready to go back to work.  

We've eaten a lot of soup as it's about the only thing that his throat can handle.  I thought I'd share my favorite recipe (from my bestie!)

Broccoli Cheese Chowder

2 bunches (about 1 pound) fresh broccoli
1 medium onion, chopped
1/4 cup butter
1/2 cup butter
1/2 cup flour
4 cups milk
1 cup chicken breast
1 1/2 tsp salt
2 cups grated cheddar cheese

Cook broccoli just until tender.  Do not overcook.  Drain and cut into small pieces; set aside.  Saute chopped onion in the 1/4 cup butter until tender; set aside.  In large saucepan or soup pot prepare a white sauce:  melt the 1/2 cup butter over medium heat, then stir in flour until well blended.  Gradually stir in milk, chicken broth, and salt.  Stir constantly until mixture reaches a boil.  Cook 1 to 2 minutes, until thickened.  Add broccoli, onion and ham.  Stir in cheese.  Cook briefly over medium heat.  Avoid bringing to a boil.  Serve immediately or keep warm over low heat.  Makes 6-8 servings.

I like to serve it in a bread bowl.  If I have time I make my own dough.  If not, I defrost Rhodes frozen loaves in the microwave.  Once they are softened, I cut them in half and shape them into two round mini loaves.  My kids love this meal!
